Founder Portia Hart spent nearly a decade working on yachts on the Côte d'Azur (and, in her words, having lunch on the beach) before moving home to the Caribbean; her mother is Trinidadian. Blue Apple is her attempt to give Cartagena the kind of beach club she missed from the south of France and Ibiza, translated into a Caribbean register and built on top of a converted private home using local architectural techniques and materials. The location matters: Playa Mamón in Bocachica village, on Isla Tierra Bomba, a twenty-minute boat ride from the city with three departures a day. The islands around Cartagena aren't famous for good food, and Blue Apple was built specifically to change that, with a farm-to-table kitchen training young cooks from the local islands. Executive chef Pedro Mosqueda came home to lead the kitchen after stints under Jean-Georges at The Mark, Galen Zamara at MAS Farmhouse, and April Bloomfield at The Breslin.
