Most beach clubs around Cartagena trade on volume and views; Blue Apple trades on flavour, atmosphere and intent. Three real edges: the food is genuinely good (Michelin-Guide listed, executive chef Pedro Mosqueda trained under Jean-Georges, April Bloomfield and Galen Zamara, farm-to-table sourcing on islands not known for it), the credentials are independently verified (B-Corp, solar-powered, zero waste, living-wage employer, Regenerative Travel member), and the social contract is unusual for the category (staff and neighbours on Tierra Bomba treated as equal stakeholders, not backdrop). The aesthetic reference is the Côte d'Azur and Ibiza, not the standard Caribbean resort playbook.

Founder Portia Hart spent nearly a decade working on yachts on the Côte d'Azur (and, in her words, having lunch on the beach) before moving home to the Caribbean; her mother is Trinidadian. Blue Apple is her attempt to give Cartagena the kind of beach club she missed from the south of France and Ibiza, translated into a Caribbean register and built on top of a converted private home using local architectural techniques and materials. The location matters: Playa Mamón in Bocachica village, on Isla Tierra Bomba, a twenty-minute boat ride from the city with three departures a day. The islands around Cartagena aren't famous for good food, and Blue Apple was built specifically to change that, with a farm-to-table kitchen training young cooks from the local islands. Executive chef Pedro Mosqueda came home to lead the kitchen after stints under Jean-Georges at The Mark, Galen Zamara at MAS Farmhouse, and April Bloomfield at The Breslin. The sister property, Townhouse Art Hotel & Rooftop in the Walled City, opened because so many guests asked for the same feeling in town: eleven rooms, a terrace bar, and a tiny jazz and live music room called Members Only. Blue Apple guests get VIP treatment and a round on the house there, and vice versa. The sustainability story is structural, not decorative.
