Blue Apple's founder, Portia Hart, spent nearly a decade working with yachts on the Côte d'Azur (and having lunch on the beach) before moving home to the Caribbean (her mother is from Trinidad & Tobago).
In Blue Apple, Portia gave Cartagena a beach club that blends top level comfort and personalised service with a laid-back, home-away-from home setting, that places community and staff on an equal footing with guests.
It's still luxury, it just feels better (for everyone).

EXECUTIVE CHEF
PEDRO MOSQUEDA
Chef trained at the Gato Dumas Institute in Bogota and then worked in leading Colombian kitchens run by Ivan Galofre, Harry Sasson and Nicolas De Zubiria, before moving to New York. There, he joined 3-star Michelin Chef Jean Georges’ team at The Mark Hotel and later James Beard winner Galen Zamara’s MAS Farmhouse. His final kitchen before making his way home, was April Bloomfield's Michelin-starred The Breslin.
Here at Blue Apple, Pedro is committed to a farm-to-table ethos and sharing his international training and experience with young cooks from the islands of Cartagena, to create one of the most local and sustainable menus in the city..
